Appetizer recipe on Hells Kitchen?

Ok so I watch Hells Kitchen and there is this appetizer that they serve and Ramsey is always saying how Dave's is delicious and it is green but it is not pesto but I cannot remember the darn name of the dish. I have it on the tip of my tongue but cant get it out. Can you help me and also give me a recipe and does anyone know if it really is good?
